We refer to Thursday’s as “Assembly Day” for wedding cakes. This is the day cake tiers are leveled and filled with an assortment of delicious flavors. Today we assembled between 15 and 20 tiers with fillings such as: strawberry cream, lemon curd, black raspberry chambord, white chocolate mousse, peanut butter, and chocolate ganache. The cakes are then crumb coated with buttercream frosting and placed into refrigeration.Tomorrow begins the next step of the assembly process; frosting and decorating.
Typically more time and energy goes into baking and assembling the cakes than the elegant decorations that adorn the frosted tiers. We take great pride in making delicious cakes that people are eager to sink their teeth into.
